Ayurveda nutrition is one of the main health
pillars for this science, which appeared in India. Although
being in it’s cradle, not all people are conscious or have
access to the benefits of the ancient Ayurveda life style.
Indian cooking finds sophistication by simple use of an
universe of spices. But, we should not confuse it with
Ayurveda Nutrition.
Ayurveda considers medicine and diet as complementary. It is
not possible to keep the vitality of body or to prevent an
illness, if we don’t know the powerful effect of food on
physical health, mental clarity and spiritual progress.
The difference between Western and Ayurveda Nutrition is
that besides the important approach to nutrients, Ayurveda
added the five elements and digestive and post-digestive
power of foods, as important tools for the recovery and
maintenance of health. |

When we cook under Ayurveda rules, it's important to consider
the effect of a meal on the mind, as much as on the body.

A balanced meal must have the six flavors (Rasa)
1. Madhura (Sweet)
2. Amla (Sour/Acid)
3. Lavana (Salty)
4. Katu (Spicy)
5. Tikta (Bitter)
6. Kashaya (Astringent)
And when it is necessary to balance any Dosha, it will be
under an individual program indicating the best flavors to
use. |
